Honey Apple Cupcakes
3/4 cup honey
1/2 cup white sugar
1/4 cup light brown sugar
1 1/4 cup canola oil
1 1/2 tsp vanilla
3 cups all purpose baking flour
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
3/4 tsp salt
1/4 tsp allspice
Dash of ground cloves
4 Granny Smith apples - peeled, cored, and shredded
Preheat oven to 325 degrees F.
In a large mixing bowl, beat the eggs until they are frothy.
Whisk in the honey, white sugar, brown sugar, oil and vanilla.
In a separate medium mixing bowl, sift together the flour, baking powder, baking soda, cinnamon, salt, and spices.
Incorporate the flour mixture into the liquid, stir to blend. Fold in the shredded apples.
Fill the muffin tin 3/4 of the way and bake for approximately 25 minutes.
When the cupcakes are done and have cooled, decorate them with dried apple slices and a generous drizzle of honey.
