3  cloves garlic, peeled and sliced&lt;br /&gt;
1  lb. asparagus, trimmed and cut in 1-1/2-inch pieces&lt;br /&gt;
2  skinless, boneless chicken thighs, cut into strips&lt;br /&gt;
1/2  tsp. salt&lt;br /&gt;
1/4  tsp. pepper&lt;br /&gt;
3/4  cup reduced-sodium chicken broth&lt;br /&gt;
1  Tbsp. snipped fresh tarragon

&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;In extra-large nonstick skillet heat 2 tablespoons oil over medium-high heat. Evenly layer potatoes and carrots in skillet. Cook, uncovered, 5 minutes, until potatoes are golden, turning once.&lt;/li&gt;
&lt;li&gt;Add mushrooms and onions. Cook 5 to 6 minutes, until vegetables are crisp-tender, stirring often.&lt;/li&gt;
&lt;li&gt;Add garlic and asparagus; cook 3 minutes. Transfer vegetables to bowl; set aside.&lt;/li&gt;
&lt;li&gt;In the same skillet heat remaining oil. Sprinkle chicken with half the salt and pepper. Cook chicken in hot oil about 3 minutes, until lightly browned, stirring occasionally. Add broth; bring to boiling. Reduce heat. Simmer, covered, about 3 minutes or until no pink remains. Increase heat to medium-high. Stir in cooked vegetables; heat through. Stir in snipped tarragon and remaining salt and pepper.&lt;/li&gt;

&lt;li&gt;Add chopped asparagus, and cook for 1 minute. Stir in broth and 1 cup water; bring to a boil. Reduce heat to a simmer; continue cooking until asparagus is tender, about 15 minutes.&lt;/li&gt;
&lt;li&gt;Meanwhile, prepare an ice-water bath. Fill a medium saucepot with water and bring to a boil. Add salt, return to a boil, and add asparagus tips. Cook until just tender. Transfer asparagus tips to ice-water bath; let cool about 1 minute. Drain and set aside.&lt;/li&gt;

We&#039;re taking five green vegetables and trying out different methods to get our tots to gobble them up.&lt;/i&gt;&lt;/p&gt;
&lt;p&gt;First up, spinach! Popeye&#039;s favorite vegetable isn&#039;t always tops on lil ones&#039; list of favorite foods. The leafy vegetable may be known for supplying vast amounts of iron, calcium, and rich antioxidants, but its overall texture can scare away the kids. By transforming it into a sauce to accompany a favorite pasta dish, the vegetable&#039;s nutritional value remains intact, and wee ones will be begging for more. We added some fresh lemon (both juice and peel) to some baby spinach, pine nuts, and Parmesan cheese to create a pesto that my son helped blend to perfection. &lt;/p&gt;

&lt;li&gt;Combine the spinach, pine nuts, lemon juice, and lemon peel in a processor. Lightly pulse. With the machine running, gradually add 1/3 cup of the oil, blending until the mixture is creamy. Add salt and pulse. Put half of the pesto into ice cube trays and store in the freezer for future use.&lt;/li&gt;
&lt;li&gt;Transfer the rest of the spinach mixture to a medium bowl. Stir in the Parmesan. Season the pesto with salt and pepper, to taste.&lt;/li&gt;

Around this time of year, farmers markets lose a bit of lushness and start resembling outdoor root cellars. However, hidden amongst the piles of potatoes, carrots, and turnips is one of my most favorite vegetables ever: broccoli rabe, aka rapini.&lt;/p&gt;
&lt;p&gt;I first came across this bitter leafy green while traveling in Italy and quickly learned that it does not taste like regular ol&#039; broccoli. They&#039;re similar in color and texture, and even though broccoli rabe sprouts small florets, it&#039;s closer in relation to the turnip family. Being a big fan of turnip greens, kale, and chard, I was immediately attracted to its bold, pungent flavor. In Italian cuisine, it&#039;s common to saute broccoli rabe with a little bit of olive oil, chili flake, lemon juice, garlic, and sea salt. She made the most amazing soup!&quot; I informed her that the very same soup was cooking on my stove and invited her over. I&#039;m glad I did because the recipe serves a crowd. Like all Barefoot dishes, it&#039;s basic but full of flavor and wildly satisfying. The lentils provide a rich meatiness, and the chunky veggies are comforting and filling. To make it vegetarian-friendly, simply use vegetable broth instead of chicken stock.
