Lil Tip: Making Sandwiches

One of the worst crimes I ever committed was smart talking to my parents in front of their very proper friends. As part of my punishment, my mom dragged me to church every Wednesday night for a month to make sandwiches for the homeless. Kicking and screaming at first, I quickly started to enjoy the bonding time with my mama and learned a couple of things:

Don't disrespect your parents - whether their friends are present or not.

Volunteering can be fun and rewarding.

After serving my time, my mom and I continued to make bologna sandwiches on Wednesday evenings. My mother, now a Sunday school teacher, gathers her class once a month to make 50 bagged lunches and then drops them off to people in need. It is a quick and easy example to set for your children, and chances are, they will love to help you spread the mayo and mustard onto to those slices of bread.

Delilicious: Heart-Shaped Sandwiches

Surprise your lil love on Valentine's Day by slipping a heart–shaped sandwich into their lunch bag. Lots of lil eaters are picky about their peanut butter and jelly sandwiches - so whether they like crunchy or creamy, crust or crustless, this handy gadget is sure to sweeten their meal.

The large heart cookie cutter can be placed over any creation and sliced into shape. And, if you've got a couple children sharing the sandwich, it eliminates the argument about who got the better half.

Elvis Pancake Sandwiches: Breakfast and Lunch!

Breakfast sandwiches are popular with rushing mothers and their kiddos on the go! From egg filled bagels to bacon and cheese caught between an English muffin they fill the tummy up right. My son favors waffles sandwiches. The handy breakfast is easy enough for him to munch on in the car if he doesn't finish it before I have to shuttle him to school. While all the hearty meal involves is the simple assembly of two whole grain waffles (store bought or homemade) and a slathering of fresh peanut butter between them, I recently watched Big Daddy over at the Food Network make a more inventive recipe for his boy.

A twist on a sandwich Elvis Presley was famous for - peanut butter and banana, the cook takes buckwheat pancakes, adds the protein spread, sliced bananas and a drizzle of honey to make a morning sammie that can be finished in the afternoon if you pop it in your kiddo's lunchbox. While the flavors appeal to wee taste buds, its quick prep time makes it a dish mama can accomplish even if she isn't completely awake.
To get the recipe, read more.

Elvis Pancake Sandwiches
Recipe courtesy Aaron McCargo Jr., Food Network

Looking for a meal that can be made for breakfast and finished for lunch? Try Big Daddy's Elvis pancake sandwiches.

Ingredients

Batter:

    * 2 cups buttermilk
* 2 eggs
* 2 teaspoons baking powder
* 2 teaspoons sugar
* 1 teaspoon salt
* 6 tablespoons butter, melted
* 1 cup all purpose flour
* 1 cup buckwheat flour
* 2 tablespoons butter, cold plus more as needed
* Peanut butter, for topping
* Sliced bananas, for topping
* Honey, for topping

Directions
In a large bowl, whisk together buttermilk, eggs, baking powder, sugar, salt and butter.

In another large bowl mix together all-purpose flour and buckwheat flour.

Slowly add flour into the wet ingredients mixing with a whisk. Mix until there are no lumps and the batter is smooth and velvety.

In a large cast iron skillet or flat grill pan over medium-high heat, melt a tablespoon of butter. Ladle pancake batter onto skillet to desired size. Using the ladle, form pancake into circular shape. Cook on each side for 2 to 3 minutes or until golden brown. Set pancakes aside and keep warm. Repeat with remaining ingredients.

Once completed, spread peanut butter on a pancake, layer it with sliced bananas and drizzle it with honey. Top the pancake with another pancake to form a sandwich. Repeat with remaining pancakes and serve with extra honey.

Sibling Shower: Food and Beverage

Set out a spread fit for the family's queen bee or lil king. Tempt tots' appetites by playing to a few of the sibling-to-be's favorite foods with a twist. Our menu is made up of swaddled babies also known as babes in blankets, classic macaroni and cheese bowls, and baby carrots with ranch dip. Let lil ones wash it down with some fresh squeezed lemonade and indulge in a pint-size party treat - cookie ice cream sandwiches! Adults will likely nosh and get nostalgic about these childhood staples.

View 5 Photos ›

For the recipes, read more.

Babes in blankets: Buy your favorite brand of cocktail weenies and roll them in a store-bought pastry dough cut into triangles Place them on a cooking sheet and pop them in the oven to bake. Allow the concoctions to cool and then create wee faces with an edible ink pen. Condiments like ketchup, mustard and relish can be used to decorate the blankets with pinstripes, floral patterns, and polkadots. Pair it with your child's choice of mac and cheese and baby carrots with ranch dip.

Cookie Ice Cream Sandwiches: Purchase a pack of Immaculate Baking Company's Triple Chocolate Chunk Cookies or another flavor of your choosing. After baking the cookies and allowing them to cool, scoop a ball of ice cream (I used Alden's Organic Mint Chocolate Chip) in the center of one cookie, top with another, and then press the two together until it forms a sandwich. Pour sprinkles or colored sugar on a plate and roll the edges of the sandwich around to collect the decoration. Place the finished goodies back in the freezer to firm up and then serve.

Mural Meal: Choo Choo Grilled Cheese Train

A sucker for dairy products, my babe loves to take down a grilled cheese sandwich for lunch. Instead of cutting it in half with a pickle in between, I like to add some commotion to the meal. And by that, I mean locomotion. Turn that cheese filled sammie into a train and that choo choos all the way to her tummy.

Cook up the cheesy classic and slice it into four squares. If you have a long plate or platter, set it out for a change of pace. Dice zucchini and cook it with a pat of butter and season with a dash of garlic salt. Once it's ready, turn the green veggie into wheels. Use sliced bananas to make a spread of sunlight above the train. Add some raisins to the engine cart as steam rises into the sky. Chop up a few carrots to connect the train cars. For their dipping pleasure, squirt a few dots of ranch dressing into the sky for clouds. For something sweet, toast some shredded coconut and place along the bottom of the train for the gravel path.

Kate Gosselin's Recipe: PB & Banana

<img  width=160 height=54  src='http://media.onsugar.com/files/upl1/10/107379/40_2008/kate's-kitch.large_1.jpg'>

If your wee ones are craving something slightly different than the staple peanut butter and jelly, Kate Gosselin (who recently shared her tricks for feeding a family of ten with us) suggests opting for a nutty sandwich with a more starchy fruit complement.

PB & Banana

2 slices of whole wheat white bread (also good with oatmeal bread)

1 banana, thinly sliced

Peanut butter

Spread each slice of bread with peanut butter. Place thin banana slices on one slice. Close sandwich and cut into triangles.

Delilicious: A Shortcut to Cookies and Time With Your Child

Life is busy, so make it sweet. Moms on tight schedules may not have time to bake cookies from scratch after a long day at the office or park, but their children can still benefit from kitchen time together and indulge in a treat. A few weeks ago, I bought a bag of Chocolate Chunk Better Bakes ($4) at Whole Foods. The container of organic pre-portioned cookie dough from Immaculate Baking Company shortened the timely task of batter-making. My daughter just popped a few circles onto a baking sheet, and I put it in a 325 degree oven for 14 minutes. Once the cookies cooled, she had fun making them into lil sandwiches by spreading ice cream or peanut butter between two and fusing them together. To fancy up the edges, she then rolled them in chocolate sprinkles or crushed peanuts. Since the dough bits are quarter-size, they make great mini desserts.
