This week, Tori shares her husband Dean's new omelet muffin recipe.


Having a husband who is so handy in the kitchen is a blessing on its own, but when he gets the kids involved, I'm extra grateful. Cooking is a great skill to learn at any age and a fabulous way to keep the kids busy during the long summer days. Not to mention kids, at least mine, are more apt to try new things if they feel involved in the process!

His Omelet Muffins are super kid-friendly and delicious to boot (you know I love my savory cupcakes!) — they're a huge hit in the McDermott household. Plus they're convenient for the parents because the recipe calls for ingredients you always have in your house.

Kids love being able to get creative with the recipe and really tailor their breakfast based on their own tastes — let them pick their ingredients and follow these simple steps for a mouthwatering, family style brunch:

Ingredients

4 large eggs
1/4 cup half-and-half
1/2 teaspoon salt
Whatever mix-ins you choose. Bacon, chives, Parmesan cheese, and salsa are a few of our family favorites, but you can use whatever you like.

Directions

  1. Preheat your oven to 350 degrees and coat a 6-cup muffin tin with cooking spray.
  2. Whisk together the eggs, half-and-half, and salt in a medium bowl — this is a great step for the kids to try! Then together, pour the mixture into the muffin cups.
  3. Here's where we get creative — using about 2 tablespoons of your desired add-ins, mix up your muffins using a toothpick to stir. They don't have to all be the same!
  4. Bake the muffins until they are puffy with golden brown edges, about 20-25 minutes.
