Ingredients

1/8 cup sunflower butter
1 cup homemade marshmallow cream (recipe follows)
6 cups crispy brown rice cereal
Pan spray as needed
(6) 3 x 8 1⁄2 inch sheets of Apple and Kale Fruit Leather (recipe follows)
Your choice of fresh fruit (strawberries, pineapple, cantaloupe, kiwi, apples, etc.)

Directions

Yields 48 1" pieces
Spray a 12x17" baking sheet with pan spray. Melt sunflower butter in a 2-quart saucepan over medium heat. Add the marshmallow cream and stir until smooth.

Remove the mixture from the heat and stir in the rice cereal until it's evenly coated. Press the cereal mixture onto the sheet, distributing it evenly. Cut the cereal sheet into 6 rectangle pieces approximately 4x8 1/2". Place a piece of fruit leather on each sheet leaving 1" from the bottom.

Starting at one side an inch up from the lower edge, place choice of fruit atop the mixture end to end in a horizontal line on top of the fruit leather. Using a sushi mat, gently roll the lower edge of the cereal mixture over the fruit.

Use the same method to form 5 more rolls. Slice each roll into 1" thick "sushi" rolls.

Serve With:
Mock Pickled Ginger: Cut cantaloupe into extra-thin slides to resemble pickled ginger
Mock Wasabi: 1 avocado and 1 tsp. fresh lime juice mixed well. Form to resemble wasabi.
Mock Soy Sauce: Mix 1/2 cup cocoa powder; 1/4 cup honey; 1/4 cup water. Heat on medium and blend well. Chill and serve.
