Hi DCBaxter - you can also make the balls, put the sticks in them, and freeze them until you are ready to dip them in the chocolate. That way half the work is done in advance.
DC Baxter, the woman who originally came up with the idea of cake balls (off the stick) doesn't put any frosting in at all. As long as the cake is moist enough to stick together, you don't need any, or need just a little. They can be made a few days ahead and stored in a cool area.

I want to do these for my daughter's first birthday. Do you think it's something you can make ahead of time? A few days or a week ahead? I wonder if you added only half a can of frosting if it would still stick enough but be less sweet?
